Shrimp Spring Rolls

This is a perfect appetizer for game days, parties, or just because! These rolls are loaded with delicious ginger and soy sauce flavor and filled with a mixture of shrimp, cabbage, carrot and pepper.

  1. Chop 12 shrimp, season with salt and pepper, and lightly saute chopped shrimp and whole shrimp in oil until fully cooked
  2. Remove whole shrimp from the pan
  3. Boil the cabbage leaves in salted water until tender
  4. Grate the ginger
  5. Finely chop the leek, pepper, carrots and cooked cabbage leaves
  6. Add the chopped vegetables to the pan with the shrimp, season with grated ginger, sugar and soy sauce
  7. Soak rice wafer paper in water, and place on a damp cloth
  8. Add a cooked whole shrimp in the center of the rice paper, top with a scoop of the cooked mixture, and wrap the rice paper
  9. Plate with a side of sweet and sour sauce
