This recipe is an easy and delicious balanced meal with Cape Hake, which is a natural source of protein, and a rainbow of colorful vegetables, including pepper, onion, zucchini, asparagus, and mushrooms.

  1. Slice the zucchini, julienne cut the bell pepper and onion, quarter the mushrooms, and cut the stems off the asparagus
  2. Drizzle the zucchini, pepper, onion, and mushrooms with olive oil
  3. Drizzle the asparagus with soy sauce and sesame oil
  4. Place all the prepared vegetables on a hot griddle, cook on both sides until softened
  5. Season the Cape Hake fillets with salt and pepper on both sides, cook on a hot griddle for about 2 minutes on each side or until golden and an internal temperature of 145°F is reached
