Salmon Poke Bowl

This refreshingly light poke bowl is loaded with flavor and bright colors! This makes an excellent summer dish or an easy lunch.

Instructions:

  1. Mix the soy sauce, vinegar, sesame oil, and sugar in a bowl
  2. Cut the salmon into cubes and add into the bowl to marinate for about 20 minutes, then drain
  3. Add two cups water and quinoa to a pot, bring to a boil, cover and reduce heat to low, simmer for 15 minutes or until quinoa has absorbed water
  4. Thinly slice the cucumber, carrot, cabbage, and avocado
  5. Combine the mayonnaise and wasabi in a bowl
  6. Add the cooked quinoa to a bowl, drizzle with olive oil, top with drained, marinated salmon pieces and sliced vegetable
  7. Garnish with sesame seeds and wasabi mayo dressing

  • 1 lb Salmon
  • 1 tsp sugar
  • 1 tbsp vinegar
  • 3 tbsp soy sauce
  • 2 tbsp sesame oil
  • 1 cup quinoa
  • 2 avocado
  • 1 cucumber
  • ¼ red cabbage
  • 1 carrot
  • sesame seeds
  • 1 1/2 tablespoon mayonnaise
  • 2 teaspoon wasabi
